Call me crazy but...Jan's Rub is good on everything, right? Why not jerky, too? So I bought 4 lbs of lean top round and ground it coarse.
Added:
6 TBS Jan's Rub
1/2 tsp extra cayenne pepper
~0.8 tsp cure #1 in 1/4 cup water.
mixed everything together then into the frig in a zip lock overnight.
Stuffed into a 3" casing and into the freezer for 3 hrs to firm up.

Then I sliced it into wafers.

After 2 hrs of hickory smoke @ 150 F, then finished in the dehydrator, I got a nice little batch of jerky.

Turned out great. Interesting flavor with just the right amount of heat for me.

Was the 6 TBS per pound or total added to complete amount? Looks awesome! May give this a try in snack sticks.
