So I made my first ever sausage today...4lbs of HiMountain pepperettes. I wanted to use the kit to get my feet wet and figured that I could learn and change up the recipe from here. First time using my KitchenAid grinder which doubles as a stuffer too.

All in all it went well and I learned a lot. Into the Bradley's tomorrow to smoke for a few hours.

Thanks for all the help along the way. It gave me the confidence to even try this out!

Those look great!  Especially for being stuffed with a KitchenAid grinder. 
I started out with that, and have since upgraded.  But it will get the job done. 
Post up some pics after it comes out of the smoker.

Good looking sticks for the grinder. Not many can make them look that good from a grinder stuffer.

I think I may have messed up my pepperettes. For some reason I got it in my head that to smoke/cook them I had to cut them into sticks.

Just re-read the instructions and the last step after smoking them is to cut them into sticks. Oooops.

They're in the Bradley's now getting up to 165f.

Did I just ruin them?

Don't worry you will be fine just watch your it temp and you should be ok. I have stuffed sausage then cut them into links and then smoked them tons of times and they turn out just fine.   152- 155 it will get them sticks lip smacking good.Good luck

This is a bad thing you have done.......
Starts out with small sticks in 4 lb batches, and soon turns into 50# batches of summer sausage.
An uncontrolled addiction to sausage making is a bad thing.
Eat the evidence.....
Nice job on the sticks.
