Well I put the hammer on a Tom 2 days ago, now I've got the breast meat in the smoker!
It's my first time smoking turkey and I'm pretty excited.

I brined it for a day and a half, wrapped it in bacon, now it's apple smoking for two hours at 200 till I hit an IT of 163.
Keep us posted how it goes as would like to try this myself...
