Title: Outside temp

I'm going to smoke some cheese...possibly tomorrow. Depends on the responses I receive really. I live in Vancouver (Delta really...home of Brady Smokers), BC Canada. The outside temperature is supposed to be 63 F (17 C) tomorrow. If I use my Brady cold smoke adapter, will it be OK to smoke cheese?

I am not an expert like others on this forum but the last time I smoked cheese the temperature was about the same as you have and I don't have a cold smoke adapter so I used a frozen water bottle to keep temperature below 100F degrees.  I have smoked cheese several times, kept temps between 75-100 and always turned out great.

With the cold smoke setup you should be alright. Smoke early in the morning, or after dusk. If you can't smoke at those times, make sure you keep the smoker out of the sun. You can use ice, but I find it restricts the flow of the smoke to some extent. This is one smoke that I recommend a vent fully opened.
