Once again I come to the experts for advice. My mom needs low potassium foods and I was wondering how to figure out how much potassium is in the sausage I would make. for example venison SS, brats and the like. I often use spice kits from Hi mountain. I am also sure salt has to be adjusted also. Any help ideas would be greatly appreciated as she loves a store bought SS but can no longer have it . Thanks in advance folks for all your help.

Potassium is naturally found in most meats, dairy products, vegetables and fruits. I took a look at several of the High Mountain seasoning, and didn't see any additional source of potassium added, except the Mandarin Teriyaki Blend Seasoning, that wouldn't occur naturally. Again I just glanced at the ingredients, but if they added potassium it should be listed. So it appears that using their seasonings, you will not be adding any additional potassium that is not found naturally in foods or your own recipes. You should follow up and send them an email to make sure, and see if they will respond.

Commercial Summer Sausage often will add potassium sorbate as a preservative, and will list it on the label.
