Title: Snack Stick Qusetion

Getting ready to make some snack sticks.
The last time I made them I think I used the LEM 21mm casings on a 19mm tube.  The casings stated 'DO NOT Soak' However I had to soak them to get them on the tube.  Any thoughts on this??
Also is it recommended to place in a cold water bath when complete ??

I never soak colagen casings and have never put into an ice bath after taking out of the smoker. The always turn out great.

Are you sure about the size of your casings and tube.   They should fit.    I've found some are tight to get on and what I've is rub the tube lightly with some olive oil.   They slip on easily then.

Tube size in inches and mm for casings.

Inches OD straight tube's

3/8 or 9.5mm for 16mm collagen

7/16 or 10mm for 16 thru 21mm collagen

1/2 or 13mm for 21 thru 23mm collagen


If your tubes are tapered.

3/8 for 16mm collagen

7/16 for  19 thru 21mm collagen

1/2 for 21 thru 30mm collagen
