Title: Brisket temp

Hey guys, have 2 7lb briskets in the bradley. Going on about 14 hours right now and hitting about 175 IT. What temp should I pull them and ftc?

if you  want pilled brisket 195 - 200 F if not .. can pull at any time

Thank you sir. If I pull and ftc now they should be good for dinner around 5 ish right? About 7 hrs or is that too long?

7 hours might be pushing it. I like to take my briskets to 185 for slicing. That way they have a nice pull to them

7 more hours might be to long ,,,   go by temp, 185 or so for  slicing ,,, 195- 200 for pulling, and yes you  can FTC with apple juice or other flavored liquid for added moisture in the meat
