I made a large pot of pasta sauce and meatballs today and at the last moment added some hot italian sausage. It wasn't as fresh as it might have been but 36 hrs in the fridge before cooking should have been ok.I browned and sliced them and without tasting added them to the sauce. Big mistake I tasted the sauce after an hour or so to find it had a most unpleasant taste, the culprit.... the sausages.
They smelled and looked fine but taste like shyte. Now I have a large pot of lousy tasting pasta sauce waiting for garbage day. A lesson learned about fresh ingredients. Rant over. Thanks for listening

Yeppers. My first batch of chicken in the Bradley resulted in something that resembled jerky or chicken leather. I no longer forget that I have meat in the smoker.
