Welcome to the forum.

Since nobody has come forward with their experiences with lamb yet I will offer what I can. I smoked a leg of lamb once. I purchased one that was already in a marinade. It has been awhile. I believe I smoked it with apple for about an hour and a half and then continued to cook until done. I maintained a cabinet temp of around 200 until the internal meat temp was somewhere around 150. My memory may be a little faulty here but I think that is what I did. Turned out great.

Hopefully someone with lamb experience will eventually see this thread and give you better advice. In the mean time here is a link to the recipe site that is offered by one of our members Raye Minor (Oldman). Lots of good information here. http://www.susanminor.org/forums/forumdisplay.php?180-Our-Time-Tested-and-Proven-Recipes
