I've got my OBS for about two weeks and loving the trial and error. I order the Auber dual probe PID and just learning the logic. Thank you for the many helpful posts that I can start to learn. Many recipes don't have multiple stage cooking that the PID allows for, is this another trial and error thing of creating the stages? Would love a great chicken wing recipe if there's one out there. Lastly, the youtube video on the Bradley website shows a Camembert cheese being smoked. I couldn't find details of this but I tried it and it was amazing and devoured in under 10 mins. Thanks everyone! Getting started and loving it!
