Everyone has been pretty quiet lately, so I'll just let you know round two of HM loin will be cooked on Saturday. If you remember, I had some definite curing problems last time, due to a "too cold" fridge. Well, I set the fridge thermostsat to 51*, so it should be good. I'll let you know if this makes a difference! Did I say 51*, meant to say 39*. ;D Just wanted to hear MW say "Holy S*&%". :o

Gots me a loin in the fridge also, I am doing my Maple recipe. One thing I have noticed, my loins I have been buying at SAMS are of a different brand and do not have any injected crap in them...man I hope they stay with that.
Keep us informed..got my fridge warmed up to.
