Title: Cold smoke salmon round 2
Post by: Thompsoncentre on June 24, 2013, 03:07:39 PM
I prepared the salmon yesterday and had itin the fridge, today I pulled out to flip the fillets and on the bottom of them it's almost like it turned hard?? Did I use too much salt? I used the same as last time and it didn't do that at all? It turned darker in colour, any idea what would of caused this?

Assuming you are using a gravlox type recipe, it is not unusual for salmon to firm up a bit  and to darken when curing, much like when curing pork.  I wouldn't be concerned.
