Title: venison recipe needed
Post by: stevergs on June 26, 2013, 01:45:16 PM
I have deboned venison of varied sizesand looking for a smoking recipe to use. I have made alot of jerky already. Many pieces too small to lay on racks and not fall through at some point.  help appreciated.

Steve, many forum members use frogmats.  Nonstick high temp smoker/jerky screen.  Small mesh keeps small items, such as nuts or smaller pieces of jerky meat from falling through.  Available from yardandpool.com.  10 X 13 fits into the bottom of the racks of your Bradley electric smoker.

Steve, I do a lot of venison every year. Don't know what you are dealing with, but sounds like someone does not know how to butcher venison. If the pieces are that small, you can stick a toothpick through the ends and hang from the oven racks with the door proped open an inch or so, to let moisture out.
I am speaking of house oven, not the Bradley.
