I smoked my first Boston butts this weekend using cherry bisquettes. They turned out "okay" which was a let down. Some more rookie mistakes. I put them on racks 2 and 4 (from the top down). Using 4 was a mistake and the the bottom of it burned. I didn't rotate them either. I miss the smoke ring that comes with non-electric smoking. I also let it power through the stall, next time I'll wrap it.
I did a few things better; like pre-heating the box correctly and managing my bisquettes. Hopefully, one day I'll put it all together.
Zip,
next time put the butts on the top racks if possible ( I know that size may not let you ) also put the smallest one on top, bigger one on bottom, also bring the bottom as far forward as possible this way it will be away from the heat as much as possible.
another solution is install a fan just above the v tray to circulate the heat . then move both pieces of meat to the center of the racks... and have them as high in the smoker as possable
hope this helps
