Title: Bacon Wrapped ABTs
Post by: Roget on July 10, 2013, 12:58:24 PM
Will the bacon brown or crisp up at all when smoked in the Bradley?
Or will I have to finish them in the TBE or grill to get the bacon to not be "wimpy"?

I made some ABT's and cooked the bacon til it was almost crisp then wrapped and cooked in the smoker and they turned out great.

If you buy the cheap thin bacon it will crisp up for you

Yep thin bacon works fine.

You could also try prosciutto.  I substituted prosciutto for bacon in the bacon-wrapped shrimp skewers with jalapeno and Monterrey jack and it made a huge difference in texture and done-ness.
