Title: Snacking sticks and sausage

I did up some Honey garlic sausage with natural casings and also some snacking sticks using collagen casings.
My question is it wise to let them sit over night in the fridge or should one smoke them right a way?
Also can one freeze them before smoking in order to smoke at a later time?

Most of the time i stuff and smoke right away.

You can put stuffed sticks in fridge, cover with paper towel so the air can circulate. Dont freeze un smoked stuffed collagen.
