Title: Bunch of sausage and cheese

Have a cousin's wedding coming up in Sept. so I thought I would make some cheese and sausage.
Not sure if I posted these ( I suffer from "sometimers" - sometimes I can't remember.) so bear with me if you have seen these before.

Here is the cheese -some Gouda and 3 pepper colby -added some green onions also

In the fridge to "rest"

Vac sealed and then into the fridge to age.

Now the sausage - I didn't take pics of mixing and stuffing since if you have seen one you see them all.
Ended up with 5.9 lbs of kiełbasa krakowska wędzona; 5.2 lbs of pepper sticks (used Frisco spices mix) and 2.9 lbs of a spicy stick recipe that Nepas posted a while back.

Two potential problems, - didn't keep track of which sticks were which since they were different color casings. But after the smoke, the colors are the same so I can't tell the difference. Oh well.
Also I am not sure if I copied Nepas' recipe wrong. The way I copied the ingredients it only listed pork. Bit in the directions it says to mix the spices and the "meats" (plural). So we will see what happens.

It all looks good, you might use the pictures you posted to figure out what is where before you remove them from the smoker. :)

Damn the luck, I guess you'll just have to follow 10.5's advice and have a serious sampling session. ;)
