so in the top bowl 4#'s of fresh coho salmon, bottom bowl 2 pork shoulders don't remember how much they weigh as I was about a bottle into wine as I was prepping and forgot to look at weight, none the less, rubbed with Jans and injected with applejack, and in the bag on the right a beef roast which i'm trying for the first time as pulled beef. will be smoking in that order as well, can't wait till tomorrow, I think i'm gonna go pick up a brisket and make it a well rounded 3 days. just started my leave today and don't go back to work till next Wed.

Sounds like some good eats. Run the beef to 200-205 IT then FTC with a splash of your red wine. Should pull real nice for you.

little change in plans since I decided to sleep in, and forgot to wash my racks off last time. so a trip through the dishwasher and just got em racked up. fan on the shelf below to help get that shine on. gonna end up doing the pork overnight tonight and the fish tomorrow.

oh yeah, looked at the graph and it looks like it stalled twice, all good though, ended up off around 2pm, FTC (tried this for the first time and will continue) and BAM 4.5#'s in the end. ladies comin home with some corn on the cob, which if I didn't just throw my salmon on, would be getting wrapped in bacon and in the smoker as I still want to try that, but just have to grill em for tonight.

It was pretty amazing, I made some home made sauce up couple weeks ago and it was pretty dang good. Running low though and now I gotta try and remember what I made that last batch out of.

Yeah we're pretty good friends
Should add , my helper kinda screwed me a little. Bumped the salmon up to the last setting of 170 I think it was, whatever kummoks recipe says, and was planning on pulling it off around 1130 midnight and well the second bottle of helper thought it should stay on till about 9am when I woke back up, still tastes good, just dryer then last time.
So some of the tuna got pan seared and in the oven for about 5 to go on top of some garlic red pepper noodles with shredded parm cheese, pretty tasty. Only downfall, forgot to cook up the bay scallops I bought from pike place for the dish.
