Title: Foil vs. No Foil and freezing
Post by: Tazawoo on August 12, 2013, 01:09:53 PM
I have 2 big questions and hope i am posting them in the correct place (thread?).  First, i have been doing a lot of reading regarding wrapping briskets in foil vs. not.  No one seems to agree, but would welcome any input directly.  What are the pros and cons of each?  My second question is: has anyone smoke briskets ahead of time before a get together then defrosted and thawed.  If so, how did it turn out?  Moist, not moist? Sliced before or after freezing? How was it re-heated?  I guess i have more than 2 questions.  Sorry...i appreciate any and all input or words of wisdom any of you may have.  Thanks!

I smoke three or four at a time and freeze.  I used to foil for freezing; now I vacuum pack them.  Either way, they turn out fine when reheating.
