My name is Dudley. I am in WV. Just got my new OBS last week. Seasoned and ready to go. Smoked some Cheese with Apple first thing. They are siting in the fridge for about 3 more weeks before I give them a taste. Lots of good info here. I have a few questions but will ask in the proper section of the forum.

Welcome Dudley, Cheese is awesome smoked.
Took my notes from PZ, and now find myself eating more cheese and smoking it every other week
