Going for some Canadian bacon, peameal style (for those that don't know corn meal is the same stuff). Cutting into 3 equal sections.

All bagged and off to the fridge. Recipe calls for 21 days but I have done it in 14 days and even think it could have been shorter but it will go 14 for sure depending on my days off to get this done.

For those of you that don't know fill your sink full of water, take your baggie and dunk it in the water, all the air will escape out the top and zip it shut. Works great.

When I make peameal bacon, I can never get it to coat like that.
I'm not sure of the ingredients in your wet brine, but it shouldn't take no longer than 3 days to fully cure; 4 at the most.
Just went 7 days in the wet cure. Heres what I got

Taking one out camping tomorrow, The others are going to new homes ;) The corn meal one is for a lady that used to get them when she was living in Toronto so I said I would make her one.
If I remember I will try and get a sliced picture of the one I am taking camping.
