I took the plunge this morning when it was under a hundred degrees outside and attempted a cold smoke of a brick of sharp cheddar and some Jarlsberg hard cheese from Sam's that my dad likes.

Into the smoker with just the smoke generator for 2 hours of pecan. I put a frozen half gallon milk jug on the bottom rack and the cheese on the second from the top with a temp probe hanging slightly above the cheese.

Initial temp was 81 on the Bradley and the probe, but climbed to 97 within 25 minutes. Opened the door for a minute and added a pan full of ice next to the milk jug and put some cubes in the puck bowl after an emergency text to 10.5 (who texted me off the ledge). The extra ice got the temp down to 84 where it stayed for the duration.
Sorry Chris but I just couldn't bring myself to taste it or make Judy taste it(I do have to sleep in the same room) so hear it is vac sealed and with an open 10/1/13 note

If you would have tasted the cheddar. The waiting part wouldn't be that hard at all! Just ask those that have done it.

I have plenty of faith in those who didn't listen and tried it anyway, besides I hid it in the back of the fridge so we won't see it enough to miss it. And the best part is that when we do get to try it, it will have started to cool down from the 1's and I can make lots more to stock up on, then when I make some I'll already have some to eat.
Sometimes it just pays to wait.
