Well the boss lady wanted real gumbo but there was no andouille to be found in the last frontier.
Fortunately thanks to a book the smoking monkey sent me we found the perfect recipe! I won't bore you with the mixing details.
Stuffed and hanging out overnight before it hits the smoker.
