Title: pulled pork for a get together!
Post by: smokingthemidwest on September 04, 2013, 05:35:50 PM
Hello everybody been a long time since i have been on the forum. Summer is pretty busy when you are chasing around a two and six year old!!! This weekend i plan on smoking some pulled pork before i have to go down south for work.  How long do you think it will take to do 2 pork butts of about a total of 15lbs? If we plan on eating Sat at 6:00 P.M. i was thinking about starting them at about five P.M.  Friday night be and going overnight for the first time. Any help would be great! Thanks stm

Since pulled pork is so easy to keep warm or reheat I would start as early as you possibly can to have enough time, then you can FTC or use the crock pot/steam table type option if you finish to early.

I would say that it will take you at least 18 hours and could get close to 30 just depending on so many factors including just how stubborn the beast is. Most likely you will be around 20 to 24 hours.

What they said.  Start as soon as you can and if it's done before you need it, store safely and reheat.

The rule of thumb is 1.5-2 hours per lb.  Since you said the total is 15 lbs I'm guessing they are 7-8 lbs each.  Figure on 12-14 hours total cook time.  I go to 195*F IT before FTC for a few hours and then getting out my handy dandy Roman Pork Puller (http://www.porkpuller.com/).

I like 3 hours of pecan or apple. Hickory is good too.

Frank, I've been using four hours of hickory smoke and been happy with that.  Of course, that's on top of a heavy application of Jan's Rub, then 6 - 10 hours in the refrigerator and a couple of hours on the counter (to take the chill off the meat).

OK three to four hours of a lighter smoke, (maple, apple, hickory (maybe special blend?)) with a total cook time of 1 to 1.5 hours per pound to an IT of 195 with a box temp of 225.  Thanks all.  Looking forward to my first try at pulled pork.

the time per pound i've found for me isn't the total pounds, i did 15#'s total thnking i was looking in the 20hr range and they were done in 12-13 if i recall right. whatever your bigger of the 2 i would estimate as your max time. that was just my personal exp. and i've always used apple as well with Jans rub, which reminds me, i gotta make some more of.

Hello thanks for all the replys I got them both on the smoker now. Going for an overnight smoke. I usually smoke then put them in a roaster in the house. Got the maverick all set up for its trail run. Got the smoker set up on the patio away from everything just in case of a fire, and a cold beer in my hand. Life is good!!
