Yesterday I got a text from my daughter that lives in Atlanta.  It read......"Dad, I have an extreme EMERGENCY."  Many things are starting to run through my mind as I texted her back......what is it and what can I do?  She replied back......I went to the freezer and I am out of snack stix's.........Well, I could now see why she was in a panic.  Told her I would make her a care package this weekend and have it in the mail on Monday.

The players that are involved. 1/2 cup water with 1 tsp of cure 1 mixed up.  Salt, ECA, pepper, granulated garlic, chile powder, NFDM, hot sauce, Cayenne pepper, sugar, crushed red pepper and paprika.

Players mixed together and the ECA will be added after the meat is mixed.

Got 5 pounds of 80/20 beef all mixed up

Loaded in the Bradley OBS...  Will dry at 130 for 1 hr, bump to 140 for 2 hrs and apply Hickory, then 2 hrs at 150, 2 hrs 160, then to 170 until IT of 149-152.

Looks like a good solution to a real 911 call. I know I'll say Duh! to myself when I get the answer but what is ECA and NFDM?

ECA = Encapsulated citric acid
NFDM = Non-fat dry milk.

a few questions  you said you mixed the ECA into the meat after all the other stuff was mixed in is this correct? did you let your meat set in the fridge over night before putting into castings. is this also the recipe you added the honey/brown sugar and extra pepper to,to make the honey sweet.
