Title: My First Cheese Tasting

Tonight was the night to break out the first of our smoked cheese so I thawed out a half a smoked turkey and made some garlic, herbed toast out of the last batch of beer bread and made a tasting plate for dinner. Everything got high marks from Judy so I'm golden for more cheese smoking.

Beautiful plate, Saber.  My wife also loves the smoked cheese so much she never complains when I make large cheese purchases  ;D

I think when things slow down this winter I'm going to take the extra SG I just picked up and make a dedicated cold smoker so I can make cheese easier in warmer weather. It's either that or buy an extra cheese fridge and smoke ton's of it during the winter months

Did you smoke the turkey and then freeze it? If so,how did it turn out because it looks very tasty!!!

I smoked 2 spatchcocked turkey's a while back, here's the link to how I did them http://forum.bradleysmoker.com/index.php?topic=32862.0

I Ziploc bagged one turkey for eating then and vacuum sealed the other two halves and froze them, Yesterday I thawed one package out in warm water to see how that worked and then I served the dark meat cold on the tasting plate and saved the breast for sandwiches. As for how it tasted, it was great, moist and tender just like it was fresh out of the smoker and the smoke aroma was good and strong when I opened the bag up.

Next I'm going to look for some cheap turkey to try Viper's Disney fair cured and smoked turkey as an experiment for Thanksgiving.

Awesome,thanks ! I need to try that recipe. PS I'm a huge smoked cheese fan. I still have cheese "hidden" in fridge from my Jan. smoke...not sure how it's made it that long.

I still wish you would have tasted one right out of the smoker Robert!! Glad to hear it passed the corporate office testing procedures!

Yeah he worked me over by phone and text for hours trying to get me to lick an ashtray but I just wouldn't do it. :)

But if you do. The waiting for the cheese to be ready is a whole lot easier. You can wait for months before you try cheese!
