Others may have a different opinion but I would move that ice to a rack above the V-tray and have water in my puck bowl, I don't think the ice is going to put out the old puck and you could end up with some nasty smoke from the smoldering old pucks. Just my humble opinion though. :)

As long as it's working for you, go for it, that's the beauty of this site, every one has a way of doing it and if it isn't dangerous from a food safety or fire hazard it ain't wrong. ;D Enjoy your smoke and your cheese in a couple weeks

You will love the smoked horseradish. Always goes fast when I smoke it.

I see your from Pa, if you can buy some Cooper Sharp, try smoking it. It is by far the most popular cheese I smoke.

Lookin good!
I made some smoked cheese last Christmas and gave away as gifts. Of course I planned ahead to rest for 2 weeks.
I bought some cheese wax and dipped in for a professional presentation. This turned out awesome. Now I have many requests for a repeat performance. My gift contained a half bar of smoked cheddar in red wax, smoked Swiss in black wax, and a jar blazon' pistachios.
Santa was good to his friends.
