My friends always ask me to bring cheese to the next party. Gearing up for the next wine and cheese party this weekend. This was smoked September 5th and taste great with 2.5 hours of Pacific Blend smoke. Cold smoked at 75* and Vac sealed at room temp.

THUD That was my jaw hitting the floor. That is a load of cheese. When the guys say smoke it and vac seal it and throw it to the back of the fridge to let it age.....just ain't going to work for you. ;D

I have friends that like my cheese so much they gave me a spare fridge to keep a few batches for that special occasion.

Time to start a new batch of cheese.
I saw Costco had some good cheese. One type was some type of white cheese that had cranberries in it. Looked really good.
I really like the Cabot seriously sharp white cheddar at Costco. Great when smoked. Last time I bought a chunk of the 3 year aged stuff, won't be ready to eat til the week after Christmas.

That 3 year is amazing smoked. Had that in my first batch with some Gouda and jarlsberg. Been sticking with cooper lately mainly cuz of price.
