Title: Cold smoked Spam???

I love my Spam.

My wife thinks I am crazy.

I know some of you have hot smoked it, but has anyone cold smoked it?
I was thinking I would cold smoke it, them vacuum pack it & freeze it.
Then I could thaw it & eat it cold (which I like very much) Or.... fry it crispy (which I love)

I assume it would stay safe in the freezer, but wonder about smoking it for 1-2 hours @ 70-80F.

Any advice would be greatly appreciated.

I haven't smoked it yet.

I  am wondering  if it is safe to smoke it the way I described.

Any advice?

I think it would be just fine. It is already cooked and has been preserved. I would recommend letting it chill in the fridge and then cold smoke. I do not think you would need anymore than 1 hour though.

I thought maybe 1 hour might be enough but wasn't sure.

I'll probably just stick it in with some cheese & pull it out after 1 hour.

I have thown a cube of spam on a corner of a rack when smoking ribs and it turned out really good. Never have tried cold smoking it though. About an hour was plenty when hot smoking.

You may not like the flavor of freshly smoked cheese. I have found that after smoking cheese, it needs to rest for  a few months before it tastes right.

Sounds good to me, maybe our Hawaiian friend will pop out of his turtle shell and have something to say since it is the official meat of Hawaii. :)
