Title: I smoked Spam & cheese
Post by: Roget on October 26, 2013, 05:48:26 PM
I smoked my Spam yesterday. (along with a batch of cheese)

I  used hickory for 2 hours.

The Spam turned out great! It tastes a lot like bacon.
My wife & I had it for breakfast along with scrambled eggs and toast. (I deep fried the Spam)
She always thought I was crazy for liking Spam, but she actually asked me to make her another sandwich from it this afternoon.
Another convert!!

Next time I will probably give it a little longer smoke & maybe try oak or maybe mesquite for a stronger smokey taste.

I may just have to give that a try, although I did swear off spam after my Army days.

Smoked spam is great! Hit it with a little rub next time. Makes a great snack on while waiting for a butt or brisket to cook.

I wonder if you could slice it and dehydrate it after the smoke and turn it into spam jerky? Might have to try in a few months when I get home from work.

That sounds like a great idea.

I'm planning on smoking some more and freezing it. I think I will borrow your idea and try it out myself.

I'll let you know how it works out.

Do you slice the spam before smoking or do it right out of the can?

Thanks
Greg

Guess you'll just have to eat it outside when you give it a try.

I've never sliced before smoking, just put the cube in whole.

I've done both was(cut and whole)....prefer sliced for more "smokey" flavor.

I picked up two cans of spam today to try smoking next time I fire it up, may put one in the four rack digital and one in the 2 rack to see how it does in there.

I sliced mine in half lengthwise. It had a good bit of smoke flavor.
Next time I think I will quarter it before smoking.

Yes,

Both were cold smoked.
If I remember correctly I kept the temp at about 75F.

I hot smoked mine while I was smoking my Canadian bacon and it turned out good, sliced some up and pan fried it for dinner the other day.
