Title: forgot to soak fibrous casings now what?
Post by: brey on November 04, 2013, 05:59:56 AM
Hi all, Making 12Lbs of summer sasage. I forgot to soak the fibrous casings.  :o
I have not smoked them yet. What should I do? Take the meat out of them. Soak New casings and fill new ones or what?
What happens if I just smoke these? I cant seem to find the answer.

Smoke them, you will be fine. Soaking just makes them softer for stuffing.
