Title: jerky and cures

I have been making jerky with some Hi Mountain Seasoning kits and have ran out.I bought some prague powder #1 awhile bk and wondering if I could use this in place of the cure that comes with the kits? I was going to mix up my own blend of spices and try a batch.I have been doing them in the oven on 200 degrees for 90 minutes and they turn out great.

Sure, that's what I do.  One teaspoon cure #1 per 5 lbs of meat.

Me too, if you like a teriyaki jerky Kikkoman makes a signature original marinade that makes a great jerky, I mix mine with some Rodak's mustard fusion sauce to get a little bite in them.
