Title: Beef Heart and Liver????

So suggestions on what to do with both?  We got the when we got our half a beef and i know you can just slice the liver and cook it with some gravy and onions but was looking to see any suggestions.  Can u brine the liver or is that a bad idea to add some different flavor to it? 

The Heart................no idea what to do with it?  Thought was the son can slice it up for school but what ideas can we do for cooking it or using it for something???  We homeschool so we i was thinking we could use it for biology or something like that so we took it, but i was watching an Alaska show and they cooked it over a camp fire so i got to thinking what can we do with ours?

Happy Thanksgiving, 
my mother used to trim and clean the heart well, stuff it with a bread stuffing that included apple, onion and pork sausage. She would then bake it.  We had cattle so it was an annual event. 
Liver  I fix in bacon fat with onions or cut into a thicker piece like New York strip and grill. Used to be a supper club in St. Paul on west 7th that had that as a special on the menu.

I tried Pikeman_95's recipe for pickled heart and it was fantastic.  The recipe is in this link: http://forum.bradleysmoker.com/index.php?topic=32223.0  Try it.  The first thing we do when we shoot a deer nowadays is check to make sure the heart's not damaged!!!
