Going to attempt another prime rib dinner. Last time I Think I slightly overcooked it. CHOICE was all that Sams had, and the guy told me that is what most restaurants use also, is that true? Anyways, I decided to use some leftover brown sugar and bourbon seasoning, mixed with oil, vinegar and water to make a marinade. I will be smoking it tomorrow if anyone has any advice. My plan is to take it to an IT of 125 in smoker, then tent if for 15-20 minutes before slicing

If you want the same level of done all the way through, double foil both ends. You will not end up with a deep brown cut off the ends.
Or you may prefer some variety.
