Title: Smoked Oysters and Shrimp ABT's
Post by: Northernsmoker on December 02, 2013, 06:31:53 AM
Saw the  basic recipe's for both of these treats here, so thought I would give them a try.... with a bit of twist!!

Smoked oysters.... shucked and marinated for about an hour in 2 Tbs olive oil, 2 Tbs lemon juice, 1 large clove of homegrown garlic, fresh cracked pepper, and a pinch of homegrown cayenne pepper.  Fresh parmesan cheese for last 15 min.

ABT's... cooked shrimp, Cream cheese with a bit of lemon juice, fresh cracked pepper and homegrown garlic and cayenne again and wrapped in bacon.

Smoked both with apple wood... oysters about 2hrs, ABT's about 3 hrs..... 180 to 200 F.

Both turned out great.... keeper recipes for sure!!

Those look awesome! I had some smoked oysters at my brother's place that he did along with a ham--they reminded me that i need to do a batch soon!! He can stroll down and pick them off his local beach but I have to buy them. Those shrimp ABT's now, that's got me thinking. We catch a pile of pacific spot prawns here in the spring and I still have lots in the freezer--I'm going to try some of those ABT's for sure.
