Title: Varying temps

Like I've said before I have a DBS with an Auber PID and a mini fan. I also use a Maverick to probe various spots on the sticks. The one problem I am having is the middle sticks seem to be done 3-5 degrees sooner the the sticks that are closer to each side. Do you guys pull all your sticks once your hottest ones reach 152 or do you pull each one as they hit 152? Or do you leave all of them in the smoker until they have all reached final temp? I hang my sticks from dowel rods...would I be better off to rack them and then rotate racks?

You might want to add another dowel if you can. Then make sure your rotating the dowels. Front to back and 180 degrees

To answer your question, I pull them as they are done and leave the ones that need more time.
