First smoke ever.....came out great. To prevent the sausage from pruning do I need to cool it faster?

"Pruning" can be caused by a couple of things. It could be from over heating and "Fatting Out" the sausage. Or from allowing the IT of the sausage to get too high. If you rapid cool in an ice bath that should take care of most of the pruning/wrinkling of the sausage.
