Well figured with this back hurting and busted up hip my smoking wasn't happening. But no one was happy when they realized no smoke cheese, Smoked Ham ,Bologna or Salami for christmas. Well not mine any way. Well now i got some volunteers for my hands, back and legs. :) They've seen me do it many times with very little interest. Now a way to get my Kids involved and not just the grandkids. Diabolic huh? So they got me a 24 lb ham. Pretty large and i will do the boning or at least try. Then from their i'm the supervisor. After injecting this big boy I forget time per lb. to cure. Figured it would be easier to ask then try and remember and screw this nice meat up.  Using this basic cure. Plus my spices.

5 quarts ice water (38-40*F)
1 pound of Salt (I use Kosher)
1 cup Powdered Dextrose
2/3 cup Insta Cure #1 (6.4 ounces)

Injected hams will cure in 5 - 7 days.

Sounds like a good plan to me, especially if you have them make extra that they don't realize is staying with you after the holiday's

sounds like a  great  plan,,, i see the  next two generations of smokers coming  out of this
