Title: Shelf life?

I made pepperoni an summer sausage Sunday, and I vacuum sealed both an put in fridge, if I don't open it how long will it last, I want it for this commin weekend but would rather not freeze first

You'll be just fine for this weekend. Vac sealed in the fridge, it could last weeks, months even. Of course, if it's real tasty, that shouldn't be a problem  ;D

Bologna & franks unopened. Fridge 2 weeks/freezer 1-2 months

Bologna & franks opened. Fridge 3-7 days

Dry smoked salami unopened (EG pepperoni, jerky, dry salami (pantry) 1 year

Dry smoked opened (same as above) 1 month

Semi dry sausage unopened (EG Summer sausage) 2-3 weeks/freezer 6 months

Smoked sausages (EG mettwurst) opened 1 week/Unopened freezer 1-2 months

Smoked breakfast sausage links & patties opened 1 week/unopened 1-2 months

Fresh sausage opened 1-2 days/unopened 1-2 months freezer

Nepa-how do you get your stuff to last this long??? Mine only lasts about 2, maybe 3 days tops. I can't hide it anymore, as all my hidey holes have been found!
