Cheech here, checking in from Memphis TN. I've had a couple of smokers in the past and these must be very forgiving devices. I bought cheap units and flew by the seat of my pants and was able to produce some good chickens. Chickens were about the extent of it though. My old charbroil R2D2 cooker looked like a jet engine when I lit it...it would start with literally 2.5 feet of flame roaring out of it. That is now a thing of the past. It has been replaced with a Bradley 6-rack Digital Smoker.
Now I've gotten more serious, I've stepped up the game. I bought the legendary tome "Charcutterie" and it has inspired me. Fish, venison, ducks, chickens, cheese, nuts...it's all on the table now. With help from the wizards of smoke on this site I hope to accomplish great things.
