How big a turkey can you get 'whole' into a 4 tray smoker?

Hi Lynn;

Welcome to the forum.

The largest whole turkey I ever smoked in the Bradley was a little over 15lbs., and there wasn't much room left. I have read post of people smoke/roasting up to an 18lb. turkey. 

If you want to keep the turkey whole, the best way I have found was to us a vertical turkey roaster. The turkey cooks more evenly, and it seem to cook faster this way. If you cook them horizontally, be careful when you rotate and/or remove the turkey from the smoker. A lot of juices collect and the cavity and have a tendency to spill out, messing up your deck and giving you a hot foot at the same time. Either cooking method you want to double up the racks.

I've done them vertically whole with a doubled up rack and I'd agree with the 18 lb limit above, however if you want to spatchcock the turkey you can get a 12-14 pounder on each rack and they turn out great.

The basket to my Big Easy fits into the four rack.  The basket holds a 16# turkey, ergo, 16# fits in the four rack.
