I will be providing cornish hens for folks tomorrow night. They will be finished cooking several hours before they are served.

Should I FTC until dinnertime?
Should I immediately put the hens in the fridge?
Something else?

FTC if  with in a few hours of serving,,, you   might be able to stretch it to 4 hours
