Title: Venison Round Roast

hello all;

I'm about to be given a round roast of wild venison.

Any thoughts on how to smoke/cook it? I'm leaning towards a cold smoke, followed by a slow-cooker pot roast recipe.

I'm also getting some round steaks and rib chops.

I would cure it and make dried deer but thats just me.

That sounds like a plan for the round steaks. Do you have a recipe you can share?

Look under smoking techniques then curing there is a "dried beef" topic from late November that has a recipe that should work.

I've got a venison roast that I have marked for pastrami.  Just a thought.
