Has anyone tried the high mountion polish sausage kit? Polish sausage it the same as kielbasa correct?
It came with natural hog casings, I'm going to smoke for 3-4 hours and then finish in poacher.

I've used the hi mtn bratwurst kit with success, if you use their cure mix to be able to smoke the sausage you may find it a bit to salty but it is good. After using the kit to get my feet wet I then ventured into following the great recipes here and haven't looked back since.

Prob. A silly question, but should I link these for sausage, or should I link them like 12" long approx like kielbasa? Does it matter? I plan on smoking either way

All I've done so far is to link them, guess I just like the practice but I think whichever you want would be good.

So I made them yesterday, and after 2 seconds of stuffing I realized i could not make sausage links with these as the casing was way,to big! They wouldn't fit in a bun, so I made rings. The casing were absolutely horrible! Anyways got threw it. Gonna smoke today. And see if I can figure out how to post a pic
