Title: Perch Jerky??

A friend had brought what was called perch jerky to deer camp this year and it was absolutely delicious!! It was a teriyaki flavored smoked fish presumably panfish? I really want to try to replicate this but have no experience smoking fish.  Its ice fishing season so I'm thinking it would be a great time to try this as the fish will be as fresh as possible.

Any help on this endeavor would be great!!

Here's what I tried with Northern Pike.  Sounds similar to your "Perch Jerky".
