Title: Cheese smoke question

I'm gonna smoke some cheese today. Planning on two hours with apple with the cold smoke adapter hooked up.

How long should I let it rest after smoking before I seal it?

1-2 hrs. Unless it's really cold where you are, let it bloom in your smoker.

x2 on that. I'll bloom for 2 hours at room temp witch is around 70 degrees.

It's around 70 here today so it's gonna be about the same inside and out. Thanks

Ain't that the truth 70 today, 30 in the morning forecast with 34 the high and then two nights in the low 20's and back up to 60's for a few days.
