Since Nepa's turned out so good I finally got time to do this, Recipe is from Charcutrie page 190 , Since I'm still having trouble with Photobucket, I'll let the pictures tell the story, If you wanna know anything just ask

I like it!  What's the equipment requirements to do dry age properly this way?  Looks like you have a mini fridge going for this project?
