Getting with Tim & Art this weekend in SC. Making 2.5 lb batches of sticks for both flavors. Mix of 1.5 lbs 90/10 gb and 1 lb poke.

Amish sweet style are the kind you can get in Amish country Lancaster county PA.

Both are cured and mixed and ready for stuffing and smoke tomorrow.

First the hickory. Stuffed into 18mm mahogany collagen casings.

My tray is perfect for sizing the length to fit in the 4 rack.

Sweet are in smoked 19mm collagen, hickory in back.

PID running 130 thru 170*

130 for 1.5 hours no smoke or water in the pan. At 140* i will start smoke and add broiling water to the pan.

Looks good, what are the dimensions on that tray, I like your idea for sizing but I've seen a lot of different sized trays at the supply house.

Thats a Bradley test element that WILL NOT be in production as far as i know.

These are done, smoke and heat off so going to let bloom in the smoker for few hours. Off to a pot luck dinner  :)

My temps are PID temps 130 thru 170.
