Title: First time almond smoker.

I recently picked up a four pound bag of raw almonds at Costco. I think it was about $10. I spent some time reading and had some helpful tips come my way......and today I finally put it all to use.

1/4 cup of kosher salt.
3 TBLS of coarse black pepper
3 TBLS of Rendezvous seasoning
3 well beaten egg whites.
3 lbs raw almonds.

Mixed all ingredients very well. Spooned the almonds onto frogmats and racks and spread them thin and even. Hickory smoked for 2 hours at 225 degrees.

Really good. I believe they could have used a little more salt, but overall had a really good smokey flavor and were roasted just right.

Maybe add a little garlic powder next time for the extra saltiness? That recipe is real close to what I use but I know I put garlic powder in mine.

Garlic sounds good.

I'm already thinking about some chili-n-lime next time.

You can try keeping the salt amount the same, and after you mix the spices and salt place them in a spice grinder (or coffee grinder use only for spices) and pulverize the mix until it is a fine powder.
