For what it's worth, I'm doing a 2 1/2 lb deer roast and a 1 1/4 lb piece of deer loin tomorrow.  Cooking at 200 - 225 * F.  Jan's rub over night.  Cook 'til an IT of 135 - 140* F.  Should take about 3 - 4 hrs.  Maybe less maybe more.  Smoking for 2 hrs using the A-MAZE-N tube with Pitmaster's blend pellets (Hickory, Cherry and Maple).  It's supposed to be 4* F and windy in the morning so I'll preheat at 230*  F for at least 1 1/2 hrs, use my brick and near boiling water in the drip pan.

Slice it up into 1 1/2 thick slices. Season with a little salt, pepper ,garlic power. Toss on hot grill for about 3-4 minutes each side.  ;D ;D ;D
